Oatmeal Cookie Cups


These cookie cups provide carbohydrates to fuel, protein to recover, and fruits to satisfy your sweet tooth as a perfect post workout snack!


Makes 3 Servings

Oatmeal Cookie Cups

Ingredients:

  • 1 cup oats

  • 1 cup oat flour

  • ¼ cup coconut oil

  • ¼ cup honey

  • 1 banana mashed

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla

  • ¼ teaspoon salt

  • Greek yogurt

  • Fresh fruit, strawberries and blueberries

Steps:

  1. Preheat oven to 350 degrees. Spray a muffin tin with non-stick spray and set aside.

  2. In a large mixing bowl, mash the banana and mix coconut oil, honey, and vanilla until smooth. Add oats, oat flour, cinnamon, salt, and mix to combined.

  3. Divide mixture evenly between 8-10 muffin cups, pressing the bottoms down with a spoon and press mixture up evenly against the sides to create a well.

  4. Bake at 350 degrees for 12–15 minutes until golden brown. Allow to cool in the pan, then remove from pan.

  5. Serve warm or cold. Fill the cup with your favorite yogurt and top with fruit.
