Pickled Strawberries

Ingredients:

  • Strawberries, halved

  • 1 cup water

  • 1 cup white balsamic vinegar

  • ¼ cup sugar

  • 1 tablespoon salt

  • 1 tablespoon black peppercorns

  • Fresh basil

Steps

  1. In a medium saucepan combine the water, vinegar, sugar, salt, black peppercorns, and bring to a boil. Remove from heat and set aside until cool.

  2. Add strawberries and fresh basil to a ball jar.

  3. Pour cooled pickling liquid over the strawberries, secure the lid, and shake gently to incorporate.

  4. Refrigerate 2 hours to overnight before serving. Store in the refrigerator for up to one week.
