Blueberry Oat Crumble
Serves 4
These crumble bars provide a great source of sustained energy, and loaded with antioxidants, natural sweetness, perfect for a snack before, during, or after exercise!

Ingredients:
Oat and blueberry base
2 cups blueberries
2 cups oats
2 eggs
1 cup milk
¼ cup maple syrup
1 tablespoon coconut oil
2 teaspoons cinnamon
1 teaspoon vanilla extract
1 teaspoon baking powder
¼ teaspoon ginger
¼ teaspoon ground nutmeg
1 pinch salt
Crumble topping
1 cup oats
½ cup walnuts
¼ cup oat flour
3 tablespoons coconut oil
2 tablespoons maple syrup
¼ teaspoon cinnamon
Steps
Preheat oven to 350F. Line an 8×8” baking dish with parchment paper and set aside.
In a medium bowl combine eggs, milk, coconut oil, maple syrup, vanilla extract and mix well. Add oats, spices, baking powder, salt, and mix until combined.
Transfer to the baking dish and add the blueberries to top the oats.
To prepare the topping -In a medium bowl add oats, oat flour, walnuts, cinnamon, coconut oil, and maple syrup. Mix until a crumble forms and top the blueberries with the topping.
Bake for 45 minutes or until browned and bubbly.
