Breakfast - Breakfast Burrito

Makes 5 servings.

Ingredients

  • 5 ten-inch tortillas

  • 10 eggs

  • ½ lb. turkey sausage, cooked and crumbled

  • 2 avocados, diced

  • 1 can black beans, drained and rinsed

  • 5 tablespoons Pico de Gallo

  • 10 tablespoons low fat shredded cheese

  • Salt and pepper, to taste

Steps

  1. In a medium sized bowl, crack the eggs, season with salt and pepper, whisk to combine.

  2. Cook the eggs in a greased sauté pan to scramble to your desired consistency. Let cool.

  3. Separate 5 pieces of aluminum foil large enough to wrap a burrito in. Use a tortilla to judge the size.

  4. Place a tortilla on top of your piece of aluminum foil to start building your burritos. Evenly distribute cheese, scrambled eggs, turkey sausage, black beans, Pico de Gallo, and avocado into each tortilla, wrap burrito in aluminum foil. Repeat for all remaining burritos.

Notes

  • Cool ingredients prior to assembling burritos.

  • Freeze for up to 3 months.
