Steak Fajitas

Serves 3

One pan, 30 minutes, tons of flavors, and a simple avocado crema will have your taste buds dancing in harmony.

Steak Fajitas

Ingredients:

  • Flank Steak, strips

  • 2 cups bell peppers, julienned

  • 2 cups onions, julienned

  • 6 medium whole wheat tortillas

  • 2 tablespoons olive oil, divided

  • 2 teaspoon chili powder

  • 2 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon cumin

  • 1 lime zested and juiced

  • Salt and pepper to taste

Avocado Crema

  • 2 large avocados

  • 1 cup Greek yogurt

  • 1 lime, juiced

  • ½ teaspoon garlic powder

  • Salt and pepper, to taste

Steps

  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper

  2. In a small bowl add all the spices and mix to combine.

  3. In a large bowl, add one tablespoon olive oil, bell peppers, onion, half of the spice mixture, and mix to combine. Add the remaining olive oil and spice mixture to the steak, then transfer the steak and vegetables to the prepared baking sheet.

  4. Bake for 25 minutes, flipping halfway or until your desired temperature has been reached.

  5. While the fajitas are in the oven, prepare the avocado crema. Place all ingredients into a food processor or blender and blend until smooth and creamy.

  6. Remove from the oven, allow the steak to rest for 10 minutes, then slice against the grain.

  7. To serve transfer the steak, onions, and peppers to a warmed tortilla and serve with avocado crema.
