
Sirloin Steak with Broccoli and Sweet Potato Mash
Makes 3 servings
Ingredients
1 lb. sirloin steak
2 sweet potatoes, peeled and cubed
2 bunches broccolini
½ cup cold water
1 tablespoon avocado oil
1 tablespoon cornstarch
1 tablespoon tomato paste
1 tablespoon apple cider vinegar ½ tablespoon cumin
Salt and pepper, to taste
Steps
In a large pot add the sweet potatoes and cover with water. Bring to a boil and cook for 10 minutes or until tender. Drain the water and return the potatoes to the pot. Season with cumin, salt, pepper, and mash until smooth and the seasonings are incorporated.
In a pot with a steamer insert, steam the broccolini for 8 minutes, until bright green and tender.
Season the steak on both sides with salt and pepper. In a large skillet, heat avocado oil then add the steak and cook for 4 minutes per side until the desired temperature is reached. Remove the steaks from the skillet and allow to rest for 10 minutes.
In a wet measuring cup, whisk together the cornstarch and water to make a slurry. In the same skillet used for the steak, stir in the tomato paste, apple cider vinegar, and scrape the bottom of the pan to deglaze. Bring to a simmer over medium heat, then stir in the slurry, reduce heat and simmer for 3 minutes to form a sauce.
To serve, add the steak, sweet potato, and broccolini to a serving plate. Pour the pan sauce overtop of the steak, enjoy warm.
